2001 - S AT - Front Undertray Question?

I have a 2001 Forester that I bought about 9 months ago. I had the oil changed before I drove it home from another state and changed the oil this weekend.
Q1: I noticed the 3 most popular "how to" oil change videos none of the cars had the front undertray. Is there some thinking that this tray should be removed.
Q2: Maybe this is why the tray is gone on the videos i have seen. There are 4 bolts and two plastic clips hold the tray in place. One of the front bolts turns but will not come off. I think the nut on the other side of this bolt has broken free. This area seems to be encased with no obvious access to the nut (since they are either glues or spot welded in place. I ended pull the three other bolts and the clips and managed to rotate the tray enough to get a pan under the drain and the filter. Has anyone experienced this issue and how to best address this stuck bolt?

The plastic under tray was provided to keep the bottom of the engine clean. But over the years, jiffy lubes and snowbanks damaged them. Most owners saw little benefit in maintaining or replacing the original. Off-roaders replaced them with metal.
I have valued my under tray, and by doing my own oil changes, still have the original pop fasteners. At each change, I take a flashlight and look at the heads to check for gasket leaks. The underside of the engine and the header shields are clean and dry as new.
