215/70/16 is probably your best bet, or just the stock 215/65/16. You could possible go even bigger, but then you'll start getting into very heavy more truck oriented tires. You'll want stock size 16x6.5 wheels.

My forester come stock here in USA with 225/55R17. Should I get a smaller wheel like 16 and a thinner tire just wondering cause that's kind of what was on my mind. What are the benefits of a 215 over a 225 width tire

Lots of good off road type tires available in 215/70x16"....these are taller tires than your stockers and the tire sidewall itself is taller. 55 series tires make no sense for off roading--you will bash rims, especially if you air down.

Narrower tires will dig thru snow better, possibly better in mud as well. A 225/70x16 will probably not fit--diameter too large--but otherwise would be OK. Almost no tires available in 225/65x16, which would also be a good size.

What kind of off-road driving will you be doing? Looks like you have ultra low profile tires on 18" rims now--what is the point of that?
