Every time I connect my iPhone to the car stereo, both via Bluetooth and cable, it just starts shuffling and moving from song to song. I’ve tried searching around but don’t know how to solve this problem. Any advice?

Try to check your itunes music, maybe your in the SHUFFLE mode.

Also, verify that the music is actually STORED on your iOS device, or that you have the settings to allow music playback over cellular data. I have seen where it skips to the next track if it wasn’t already downloaded and the phone was not configured to use cellular or couldn’t reliably retrieve it via cellular.
