I know this is probably a way away from the performance tyres you are looking at, but I am a great fan of Cross Climates. I use my cars all year round and the wet/cold grip on them is astonishing. No real downside in summer either. Bit more costly though (around £550 a set from memory).
Common choice on tires
The Foz STi has arrived with some pirreli p7 which I think are a part of the issue with the cars tendency to understeer and the steering to feel a little light/loose so think a starting point would be to fit a fresh set of tires all round.
