I know, sounds pretty specific.. I've got a Vantrue N2 camera, which records in front of the vehicle as well as inside (occupants). I used it for Ubering in my previous vehicle and want to install it in my Forester. Where can I install the camera so it does not mess with the EyeSight sensors? I see a lot of folks recommend installing cameras right behind the rearview mirror mount but with the dual camera setup that doesn't work. Would slightly below/behind the mirror mount work, so the interior camera can peek beneath it?

Yes. You can go as low as you want to. The eyesight system looks through the front windshield and not below it on the inside so anywhere behind the mirror works. Just avoid creating a blind spot for yourself by putting it in the line of sight.
