I replaced my propeller shaft and some transmission fluid came out when I did but not enough to cause any real problems since I just changed it a couple months ago. I did notice before working on the prop shaft that there was some trans fluid on the bottom of the transmission tank. I have never noticed dripping or leaking before.
The check engine light came on and went away then the car won’t start properly. It will start then instantly turn off.

Does anyone know what has caused this and how to fix it?

If you restored transmission fluid level after the work, it wouldn't cause that problem.

Pull the battery cable off the battery and wait a half hour then reconnect it. See if that lets you start.

Was the prop shaft used or new oem?
Buy a new oil seal and carefully reinsert the prop shaft end. The FSM shows alignment marks have to be used. Not sure how one would transfer marks from one prop to another.
